Sous-Chef
The Maltings, Weybourne
Sous Chef | The Maltings, Weybourne, North Norfolk
An open kitchen, a vaulted flint barn and a team that’s still writing the story.
The Maltings is a 28-bedroom coastal hotel in the village of Weybourne, a stone’s throw from the sea. At its heart is The Grain Store, our flint barn restaurant. It holds two AA Rosettes and a Michelin Guide listing, and Condé Nast Traveller named it one of the Top 21 New Restaurants of 2024. The hotel itself is AA four-star. Around it sit the Main House, a Bottle Shop and our wellness rooms.
Our food is made to be shared: seasonal small plates, hearty Sunday roasts and menus that sometimes change on the day. The kitchen is open to the dining room, so you’re part of the energy and theatre of service. We’re looking for a Sous Chef to help keep that standard high and to help shape what comes next.
You’ll work alongside the Head Chef as the steady hand and second voice in the kitchen. That means an eye for detail, a calm head on a busy Saturday night and the instinct to bring a team with you.
The Role
- Hold every dish to a high standard of taste, presentation and consistency, from breakfast through to dinner.
- Run the kitchen with confidence, including ordering and stock, cost control, and health and safety compliance.
- Work hand in hand with the Head Chef to build a motivated, positive team, coaching and developing the chefs around you.
- Bring ideas to the pass. Our seasonal menus, Secret Supper Clubs, Host Table dinners, Christmas programme and afternoon teas give you plenty of room to be creative.
- Work closely with front of house and the wider Maltings team, so the experience in the room matches the food on the plate.
About You
- Experience as a Sous Chef or a strong Junior Sous, ideally in a high-quality restaurant or hotel.
- Organised, hands-on and calm under pressure.
- A natural leader who is firm, fair and generous with your knowledge.
- Genuinely interested in food and in the guests you’re cooking for.
